Memorial Day

May 30

Oh what a crazy and exciting day it was. Well we got up in the morning and I started rolls for group gathering we were having later in the day. Darrell had to go to work in the morning so he was not able to come but we went to the church for the morning breakfast. It was suppose to be outside, but it was raining off and on all day. We ended up inside. After breakfast we decided to get everything together for the group gathering. We went over to Stephanie and Ruebens a couple in our ward they have a little boy named Marcos and we got the party started we had a few couples from the ward come too it turned out to be a great party! Wish I remembered to take some pictures though! :(

Playing Doctor and First Pigtails!

May 26

Addie and Daddy decided to play doctor on Mommy's ironing board. Addie thought it was funny for a little but than she was not so excited about laying down on the board. She hates being on her back.

Addie's hair is getting so long! okay so maybe I may be exaggerating a bit but hey they kinda fit in pigtails! Doesn't she look just so cute?

Addie loves to swing all the time!! She kept smiling the whole time and making her happy screams that she always shouts.

My little baby girl is so sweet and silly, We could just sit and play all day. Addie has such a big personality now! Her hair is barely long enough for a pony!




Ayda and Addie Take Two.. or four?

May 24

Malissa, Ayda and Gershom were in town! Yay! We were extremely excited to hear that they were coming to town. We got some of the cosmetology school girls together and went to Olive Garden to catch up on life. Alex, Jayden, Megan and her little girl Addie met us there! We loved getting all together and finding out what each other have been up to. It was so fun to see Addie and Ayda play together. After Olive Garden both girls fell asleep on the way home so they left and went to take naps and than came back that night. The girls were a crack up. Ayda has so much energy she was always bouncing up and down and played with the toys everywhere. Addie usually just climbs on all the furniture she has had no interest in the toys and Malissa said that Ayda doesnt usually climb up on things. The next thing we know Addie is playing with toys and adventuring around and Ayda is pulling herself up on things. boy is it true that kids learn from each other! Addie is now a faithful Adventurer.

We were sad to see them leave and wish that Malissa and Ayda lived closer so we could enjoy more play days alot more often.








Mystery Ingredient

Squash Enchiladas



So I am sure you have heard of enchiladas before and the many different kinds you can make. I have made chicken, beef, chili but had never made squash enchiladas before... at first I was like for reals? that sounds disgusting. I figured I should try it before I completely knocked the idea. So for a family home evening night we invited some friends over and we all tried it.

6-8 Medium Yellow crookneck squash (smaller squash are better tasting)
1/2 cup Purple onion chopped
2 TB Olive oil
8-10 Corn tortillas
1 cup shredded Mexican cheese
1 cup sour cream (or Mexican Creama)
1 cup salsa verde (ours was really spicy so make sure you get the kind you like)
Dash Salt and Pepper
1/3 cup fresh cilantro, chopped

Rinse and slice the squash. Chop the onion and add to the squash. Place in a saute pan that has been coated with the olive oil.

Cook on moderately high heat until squash and onions have a pan sear, 10-15 minutes. Add pepper and Salt to your taste. Remove from heat and drain oil from pan.

Layer a 9 x 9 pan with half of the tortillas on the bottom. Place the cooked squash mixture covering the tortillas. Pour the salsa verde on top of the squash. layer the remaining tortillas on top.

Sprinkle cheese on top of the tortillas. Bake at 350 degrees until cheese has melted and bubbling, About 7 + minutes. Remove from oven. Pour Mexican Creama and cilantro over the top before slicing into individual portions.

we enjoyed it so much! It was pretty tasty we were so surprised at the final product! Give it a try!

My Daughters a Thief

May 23

I put Addie in her crib while I cleaned up her room a bit. She had a few toys in there to play with while I went about my business. The next thing I know I see Addie has a pacifier in her mouth... I was like, "I never gave you a paci? Where did you get that?" And than I took a closer look at it and come to find out it was her dolly's pacifier. She stole it from her doll. It was funny to watch her use it because it was a little funny shaped compared to the ones that she usually has.



Summer Sun

May 21

We finally had another sunny day! It has been a very rainy spring, which is fun because it reminds me of home in Oregon. At the same time it would be nice to have some sun that was not so hot that we can play outside a little.

Anyways we were going to get a group of people together to play Volleyball but didn't have enough people to play, so instead we went to the park and played tennis and laid in the grass! Addie had a blast being outside. It still is hard for her to play without just wanting to eat the grass, rocks and dirt! We hope we can get past that stage soon! Clark came to the park and we watched Darrell and him play some singles and than a girl was there that we played doubles with. It was pretty fun!





"Brake" in the Car

April 19

We took a shopping trip around town and after Winco I decided that Addie probably needed to eat and take a break from her car seat. So we just sat in the car and played around a bit. She loved to push on the windshield wiper stick and watch them go back and forth. Then she saw me messing with the window buttons and she wanted to join in as well. A couple of times she accidentally honked the horn, but it didn't phase her because it was not loud enough in the car!
